Gluten-Free Dark Chocolate Dipped Almond Bon Bons

Ingredients

1 package Solo Almond Paste
7 ounce Dipping Dark Chocolate
1 pinch crushed almonds, coconut, cocoa powder, cinnamon, etc. (optional)

Instructions

Divide the almond paste and roll into 1-inch balls. Heat the dipping chocolate according to its instructions (it’s important to use dipping chocolate because it’s easier to work with and won’t change color after it hardens). Using a toothpick, spear a ball and dip it into the chocolate until it’s covered. Drop the chocolate covered ball on a tray lined with wax paper. Remove the toothpick and use it to smooth the chocolate over the hole. Continue until all the almond balls are dipped. Place the tray in the fridge for a minute or two so the chocolate partially sets. Remove the tray from the fridge and roll the balls in your desired toppings--crushed almonds, coconut, cocoa powder, cinnamon, etc. Return the tray to the fridge for a few minutes until the chocolate has fully hardened. If stored in an airtight container, these almond balls can be kept for several months in the fridge--if you can wait that long to finish them.
