Pryaniki Cookies

Ingredients

Dough

2 tbsp butter, softened

1/2 cup honey

1 large egg

1/4 tsp baking soda

1/4 tsp salt

1/4 tsp cardamom

1/4 tsp ginger

1/4 tsp mace

1/4 tsp cinnamon

2 cups flour

3 cups flour

Filling

1 can Solo Foods Apricot Filling

Glaze

1/2 cup sugar

2 tbsp lemon juice

Instructions

Preheat the oven to 350°F, and line two baking sheets with parchment paper. In a large bowl, beat the butter and honey, then add in the egg. Stir in the baking soda, salt, and spices, mixing well. Add the flour gradually, until it makes a soft dough. Wrap the dough and chill in the refrigerator for 1 hour. On a lightly floured surface, roll the dough 1/8" thick. Cut out rounds with a 2 1/2" cookie cutter. Place a generous teaspoon of Solo Foods Apricot Cake and Pastry Filling on half the rounds. Place a plain round on top of each filling-covered round. Seal the edges with your fingers, then crimp with a fork. Place on the prepared baking sheet. Bake for 15-20 minutes, until the edges are barely browned. Remove from oven and let cool on a rack. In a small bowl mix together sugar and lemon juice to create the glaze. Drizzle over the cooled cookies and enjoy!
