Pistachio Sesame Barazek Cookies

SERVES: 29  COOK TIME: 20 minutes  TOTAL TIME: 40 minutes

Ingredients

1 pack Solo Foods Marzipan

1/2 cup tahini

1/2 cup maple syrup

1 1/3 cup ground almonds

1 1/2 cup cornstarch

3 1/2 tbsp soy yogurt

1/2 tsp salt

3 tbsp sesame seeds

3 tbsp crushed pistachios

Instructions

In a bowl, combine cornstarch, ground almonds, salt, and baking powder. Then add in maple syrup, tahini, and soy yogurt. Take out of the bowl and kneed everything in your hands until you have smooth dough. Using Solo Foods Marzipan, cut off pieces and roll into 29 balls. Divide the dough you just kneaded and roll that into 29 balls as well. Preheat your oven to 350F. Take the ball of dough and press a hole into the center using your finger. Place a marzipan ball inside and seal it by pressing the dough around it. Roll again in your palm until smooth. Dip the top of the ball into a bowl of sesame seeds. Then dip the bottom of the ball in crushed pistachios. Repeat for all cookies. Place cookies on a parchment-lined baking sheet and bake in the oven for 20 minutes.
