Apricot Almond Cookies

SERVES:   COOK TIME: 25 minutes  TOTAL TIME: 45 minutes

Ingredients

2 packages Solo Foods Almond Paste

2 Tbsp Solo Foods Apricot Filling

1 cup granulated sugar, divided

1 cup powdered sugar, divided

3 egg whites

1 Tbsp grated orange peel

Instructions

Preheat oven to 325F and line a baking sheet with parchment paper. In a food processor, pulse almond paste, 1/2 cup of granulated sugar, and 1/2 cup of powdered sugar until fine crumbs form. Add in apricot filling and egg whites, one at a time, pulsing after each addition. In a medium-sized bowl, combine remaining granulated and powder sugar. Drop a spoonful of dough into the sugar mixture, coat fully, and roll to form a ball. Arrange balls 1 inch apart on the prepared baking sheet and bake for 25 minutes, or until the tops are cracked and the bottoms are golden brown.
