Almond Tassies

SERVES:   COOK TIME: 15 minutes  TOTAL TIME: 45 minutes

Ingredients

Filling:

1 package Solo Foods Almond Paste

1 1/2 cups sugar

3 eggs, at room temperature, beaten

3 Tbsp heavy whipping cream

1 Tbsp all-purpose flour

1/4 cup sliced almonds

Dough:

1 cup butter, softened

6 oz cream cheese

2 cups all-purpose flour

Instructions

Preheat the oven to 400F and grease the cups of 2 miniature muffin pans. In a large bowl, cream together the butter and cream cheese until fluffy. Gradually add in flour until fully combined. Roll into 48 balls and press into the bottom of the prepared muffin cups. In another large bowl, combine almond paste, sugar, eggs, orange juice, heavy whipping cream, and flour. Fill each of the muffin cups 3/4 of the way full. Sprinkle with sliced almonds and bake until lightly browned, around 12 minutes. Allow to cool for 10 minutes prior to removing cookies from muffin pan.
