Alfajores

Ingredients
Filling:
1 can Solo Foods Raspberry Filling
Cookie:
7 Tbsp unsalted butter, at room temperature
1/2 cup granulated sugar
4 egg yolks
2 Tbsp water
2 cups cornstarch
1 tsp salt
1/4 tsp baking powder
Powdered sugar for dusting
Manjar Blanco:
1 12 oz can of evaporated milk
1 14 oz can sweetened condensed milk
Instructions
In the bowl of a stand mixer, cream together butter and sugar. Add in egg yolks and water, mixing until well combined. Sift in dry ingredients, mixing until fully combined. Wrap the dough in cling wrap and refrigerate for at least 30 minutes. While chilling, preheat your oven to 350F. After 30 minutes, roll the dough out on a clean, floured surface until it is around 3 mm thick. Use a 1 to 2 inch cookie cutter to cut out the cookies and place them on a baking sheet lined with parchment paper. Bake for 8 minutes and allow to cool before filling.
In a large pot over low heat, combine evaporated milk and sweetened condensed milk, stirring constantly until you can see the base of the pot. Transfer to a container and allow to cool prior to placing in a piping bag fitted with a small tip. Pipe a small ring of the manjar blanco on the outside of a cool cookie, filling the center with raspberry filling. Top with another cookie and dust with powdered sugar.
