Almond Coffee Cake

Ingredients

Cake

4 cup unbleached flour
1 1⁄2 cup sugar
1 1⁄4 cup milk
3⁄4 cup unsalted butter, softened
3⁄4 cup plain yogurt
1⁄2 cup brown sugar, packed
1 1⁄2 tablespoon almond extract
2 1⁄2 teaspoon baking powder
5 tablespoon buttermilk powder
1 tablespoon cinnamon
1 teaspoon salt
3 eggs
1 can Solo Almond Cake and Pastry Filling

Icing

1 1⁄2 cup powdered sugar (sifted)
2 1⁄2 tablespoon heavy cream
1 1⁄2 teaspoon almond extract
1 1⁄2 teaspoon butter (melted)

Topping

1⁄2 cup unbleached flour
1⁄2 cup brown sugar, packed
5 tablespoon unsalted butter, softened
1 tablespoon cinnamon

Instructions

To make this Almond Coffee Cake recipe:

  • Preheat oven to 350 degrees F
  • In a medium mixing bowl, combine flour, sugar, baking powder, buttermilk powder, cinnamon, and salt. Whisk ingredients together until well blended.
  • In a large mixing bowl, combine softened butter, yogurt, brown sugar, and eggs. Mix well, then add milk, and almond extract. Mix all wet ingredients until well blended.
  • Slowly add dry mixture to the wet mixture while stirring together. Continue stirring until the mixture is consistent, but be careful not to stir more than necessary. Mixture will be thick and may be slightly lumpy.
  • Pour mixture into a greased 9x13 glass casserole dish.
  • Place Solo Almond Cake and Pastry Filling into a pastry bag and pipe filling onto the top of the mixture. Use at least 6 oz of the filling, or you may use more filling for a more intense almond flavor.

Begin Making Almond Coffee Cake Topping

  • In a separate mixing bowl, add flour, brown sugar, butter, and cinnamon. Mix well until a crumbly consistency is achieved.
  • Crumble topping over the top of the mixture prior to baking.
  • Place the dish into a preheated oven and cook for approximately 55 minutes, or until a toothpick inserted into the middle of the cake comes out dry.
  • Remove cake from the oven and allow to cool at least 15 minutes before topping with icing.

Begin Making Almond Coffee Cake Icing

  • In a separate mixing bowl, combine powdered sugar, heavy cream (half and half or milk may be substituted), almond extract, and melted butter. Using a whisk, mix well until a smooth consistency is achieved.
  • Drizzle the icing over the top of the cooled coffee cake.
