Apricot Oatmeal Bars
SERVES: 36 COOK TIME: 30 minutes TOTAL TIME: 50 minutes
1 1⁄2 cup cups all-purpose flour
3⁄4 cup brown sugar
1 teaspoon baking powder
1 cup butter, softened
1 1⁄2 cup quick-cooking rolled oats
1⁄2 cup flaked coconut
1⁄2 cup coarsely chopped walnuts
1 can Solo Apricot Cake and Pastry Filling or 1 jar Baker Apricot Filling
To bake these apricot oatmeal bars, preheat your oven to 350° F. Grease 13 x 9-inch baking pan and set aside.
Combine flour, brown sugar, and baking powder in medium-sized bowl. Cut in butter until mixture resembles coarse crumbs.
Add oats, coconut, and walnuts and mix until crumbly.
Press half of mixture into prepared pan. Spoon apricot filling over crumb mixture in pan. Sprinkle remaining crumb mixture over apricot layer.
Bake the apricot oatmeal bars for 25-30 minutes or until lightly browned. (Center may seem soft but will set when cool.)
Cool the apricot oatmeal bars completely in pan on wire rack. Cut into thirty-six 1 1/2 x 2 1/8-inch bars.
