unbleached flour
1 1⁄2 cup
instant oats
1 1⁄2 teaspoon
baking soda
1 1⁄2 teaspoon
baking powder
1 teaspoon
1⁄2 cup
unsalted butter, softened
1⁄2 cup
vegetable shortening
3⁄4 cup
brown sugar
3⁄4 cup
granulated sugar
3 1⁄2 teaspoon
mint extract
1 teaspoon
vanilla extract
1 teaspoon
green food coloring
2 cup
dark chocolate chunks


In order to make this Shamrock Mint Chocolate Chip Cookie recipe...

  • Preheat oven to 325 degrees.
  • Place oats into a food processor and process until a fine consistency is achieved. Pour processed oats into a mixing bowl, then add flour, baking soda and baking powder. Mix together until well blended.
  • In a separate bowl, combine softened butter, softened shortening, brown sugar, granulated sugar, egg, mint extract, vanilla extract and green food coloring. Mix well, then add Solo Marshmallow Crème, and softly mix until consistent.
  • Slowly add dry mixture to wet mixture, stirring gently, and mix until a consistent color and texture is achieved. Add chocolate chunks, and mix until the chunks are evenly distributed in the dough.
  • Scoop approximately 2 oz portions (an ice cream scoop portions very well) and place on a non-stick cookie sheet.
  • Bake mint chocolate chip cookies for approximately 10-13 min, or until the edges become golden brown in color.
  • Remove mint chocolate chip cookies from the oven and allow them to cool on the cookie sheet for approximately 5 minutes before moving them to a cooling rack to cool completely.
