Ingredients

2 cup
unbleached flour
1⁄4 teaspoon
salt
2 1⁄4 teaspoon
fast rise yeast
3 tablespoon
canola oil
1⁄4 cup
packed brown sugar
2  
egg yolks
1 teaspoon
vanilla
2⁄3 cup
milk
3 tablespoon
granulated sugar
1 tablespoon
salted butter

Instructions

To make this Raspberry Paczki Donut recipe...

  • Mix flour, salt, and yeast in a large mixing bowl, then set aside.
  • Mix brown sugar, canola oil, egg yolks, and vanilla together, then add heated milk. Whisk briefly, then add to the dry ingredients.
  • Mix for approximately two minutes with an electric mixer (on high). Add a little more flour, if necessary, to form thick dough.
  • Place dough on floured surface and knead for approximately two minutes. Cover dough with plastic wrap and let stand for ten minutes.
  • Using a rolling pin, roll dough to approximately 1/2 inch thick and use a 3 inch round cookie cutter to cut dough into circles. Knead scraps, then roll and cut into additional circles if necessary.
  • Place dough circles on a baking sheet, then cover with a towel and allow to rise for approximately one hour.
  • Place cooking sheet into a preheated 375 degree oven and bake for approximately 10 minutes.
  • Melt approximately 1 tablespoon of butter and set aside. Remove cooking sheet from the oven. Remove each baked paczki from the sheet and place on a piece of parchment paper. Brush the top of each paczki with melted butter and lightly dust each with granulated sugar.
  • Place Solo Raspberry Cake and Pastry filling in a pastry bag and attach a long tip. Insert the tip into each paczki and fill with the desired amount of raspberry filling.
