Ingredients

48  
gingersnap cookies
1 cup
unsalted butter, softened
2 cup
confectioners sugar
1 pinch
cinnamon
4 teaspoon
vanilla extract

Instructions

To make this marshmallow gingersnap icebox sandwich cookies recipe…

  • Lay out twelve cupcake liners and place a single gingersnap cookie in each one (each liner will eventually have four cookies in it so plan accordingly).
  • To make the filling, add the softened butter, Solo Marshmallow Creme, and vanilla inside a large mixing bowl. Mix with an electric mixer on high for approximately 2-3 minutes while slowly adding the confectioners' sugar.
  • Spread the filling over the gingersnaps and then cover with another cookie. Repeat the cookie/filling pattern until you have four layers of each.
  • Sprinkle a pinch of cinnamon across the top of each cookie.
  • Refrigerate for a few hours until soft and enjoy!
