Ingredients

Cookie

1 cup
butter (softened)
1 cup
sugar
1  
egg
1 package
Solo Almond Paste (cut in small pieces)
1 teaspoon
vanilla
1 teaspoon
almond extract
2 1⁄4 cup
all purpose flour
1 teaspoon
baking powder
1⁄2 teaspoon
salt

Spread

8 ounce
cream cheese (softened)
1⁄2 cup
peanut butter
1 teaspoon
honey

Instructions

To make this Crispy Double Almond Cookies recipe...

  • Prepare parchment lined baking sheets and preheat the oven to 350 degrees
  • Mix the butter and sugar with an electric mixer until smooth. Then, add the almond paste and mix until thoroughly combined without visible pieces. It should be light and fluffy. Add the egg and both extracts and mix again. Then, add the flour, baking powder and salt and mix until combined
  • Using about a tablespoon of batter, drop the batter onto the cookie sheet, flattening to a disc shape
  • Bake each batch for about 8-10 minutes or until the cookies have slightly brown edges
  • Allow the cookies to cool completely.
