Ingredients

1 1⁄2 cup
unbleached flour
1 1⁄2 teaspoon
baking powder
1⁄2 teaspoon
salt
6 tablespoon
unsalted butter, softened
1⁄2 cup
half and half
1 cup
sugar
2 teaspoon
vanilla extract
1  
egg
1 can
whole cranberry sauce

Instructions

To make this Cranberry Almond Cake recipe...

  • Preheat oven to 350 degrees.
  • In a medium mixing bowl, add flour, baking powder, and salt. Whisk until evenly distributed.
  • In a separate medium mixing bowl, add softened butter and sugar.
  • Mix butter and sugar with an electric mixer on high for approximately 2 to 3 minutes. Add half and half, vanilla extract, and egg, then mix on for another minute.
  • Turn mixer to low and slowly add flour mixture. Mix until evenly blended, but be cautious not to over-mix.
  • Prepare a 9 inch cake pan by spraying it with non-stick spray. Pour the mixture into the pan, and place in a preheated oven. Bake for approximately 40-45 minutes, then remove from oven and allow to cool.
  • In a small mixing bowl, combine cranberry sauce and almond cake and pastry filling, then stir with a spoon until evenly combined.
  • Spread cranberry almond mixture over the top of a cooled cake. You will likely have some of the mixture left after covering the cake.
  • Slice the Cranberry Almond Cake, serve, and enjoy!
