Ingredients

2 1⁄2 cup
oats
1⁄3 cup
dark chocolate (coarsely chopped)
1⁄2 cup
dried cherries (coarsely chopped)
1⁄4 cup
unsalted butter
1⁄3 cup
honey
1⁄4 cup
dark brown sugar (packed)
1 teaspoon
vanilla extract
1⁄4 teaspoon
salt
1 tablespoon
cocoa powder
1⁄8 teaspoon
cinnamon

Instructions

To make this Chocolate Cherry Almond Paste Granola Bars recipe...

  • Preheat oven to 350 degrees.
  • Prepare a cake pan with cooking spray, then add oats to pan.
  • Place oats into the oven for 5 minutes, remove, stir oats, then return to the oven for an additional 5 minutes.
  • Remove oats from the oven, place in a large mixing bowl, then set aside.
  • In a small saucepan, add honey, butter, brown sugar, vanilla, salt, and cinnamon.
  • Cook over medium heat, stirring frequently until all the ingredients dissolve.
  • Add mixture to the large bowl of oats, and stir together with a wooden spoon.
  • Continue to mix until the oats are evenly coated.
  • Crumble Solo Almond Paste into the mixture, then stir to combine.
  • Add chocolate and cherries, then stir until evenly distributed.
  • Prepare an 8x8 cake pan by lining it with foil and spraying it with non-stick spray.
  • Add mixture to the cake pan and press it into the pan using a spatula.
  • Sift cocoa powder over the top of the mixture.
  • Cover with foil and place in the refrigerator for at least two hours.
  • Remove from the refrigerator, remove the granola from the cake pan, and turn it cocoa side down onto a cutting board.
  • Cut into 12 equal pieces.
  • Place pieces on a serving dish cocoa side up.
  • Granola bars can be served immediately, but for best consistency, allow to return to room temperature before serving.
