Cherry Almond Irish Soda Bread is a Modern Twist on an Irish Classic

1 3⁄4 cup
4 tablespoon
unsalted butter (melted)
large egg (beaten)
4 1⁄4 cup
unbleached flour
7 tablespoon
buttermilk powder
4 tablespoon
1 1⁄2 teaspoon
1 teaspoon
baking soda
1 cup
dried cherries


To make this Cherry Almond Irish Soda Bread recipe...

  • Preheat oven to 375 degrees.
  • In a large mixing bowl, combine water, melted butter and the beaten egg. Mix well, then crumble the Solo Almond Paste into the mixture and mix well.
  • In a separate mixing bowl, combine flour, buttermilk powder, sugar, salt and baking soda. Mix until well blended.
  • Slowly add dry mixture to the wet mixture, stirring until a consistent dough is formed. Note that the dough will have a soft and slightly sticky consistency.
  • Add the cherries and stir until consistently distributed throughout the dough.
  • Pour dough onto a powdered surface, then knead briefly to obtain a round dough ball.
  • Line a cookie sheet with parchment paper, then place the dough ball onto the parchment paper. Using a knife, cut a large X into the top of the dough ball.
  • Place dough ball into the preheated oven and bake for approximately 45-55 minutes, or until the top is golden brown in color.
  • Remove Cherry Almond Irish Soda Bread from the oven and allow to cool before slicing.
