Devil's Chocolate Fudge Cake

SERVES: 12  COOK TIME: 30 minutes  TOTAL TIME: 40 minutes



1 cup water
1⁄2 cup Simon Fischer Lekvar Prune Butter
3 large egg whites
1 1⁄2 teaspoon vanilla
1 cup plus 2 tablespoons flour
1 cup plus 2 tablespoons sugar
3⁄4 cup unsweetened cocoa powder
1 1⁄2 teaspoon baking powder
1⁄4 teaspoon baking soda
1⁄4 teaspoon salt


2 1⁄2 cup powdered sugar
1⁄4 cup unsweetened cocoa powder
1⁄4 cup lowfat milk


Preheat your oven to 350° F. Coat a 9-inch square baking pan with vegetable cooking spray and set aside.

To make cake, in mixing bowl combine water, lekvar, egg whites and vanilla; beat to blend thoroughly.

Add remaining cake ingredients and mix completely.

Spread batter in prepared pan; bake about 30 minutes or until cake tester inserted in center comes out clean.

Cool on rack.

To make icing, Combine icing ingredients in mixing bowl and beat until smooth.

Spread on completely cooled cake and cut into 3-inch squares.
