Ingredients

1 package
white cake mix
3  
egg
1⁄2 cup
vegetable oil
1⁄2 cup
Solo Almond Paste (cut in small chunks)
8 ounce
cream cheese (softened)
1⁄2 cup
unsalted butter (room temperature)
2 cup
powdered sugar
1 teaspoon
almond extract

Instructions

To make this almond cupcake recipe...

  • Make cake mix according to box directions, but when mixing ingredients, include 1/2 cup of almond paste in small chunks. This will make the batter lumpy.
  • While cupcakes are cooling, make cream cheese frosting -- with an electric mixer, combine the cream cheese and butter and beat until smooth. Then, mix in the powdered sugar, and almond extract.
  • When fully cooled, frost or pipe the frosting on the almond cupcakes and enjoy!
