In a medium mixing bowl, add flour, baking powder, and salt. Whisk until evenly distributed.
In a separate medium mixing bowl, add softened butter and sugar.
Mix butter and sugar with an electric mixer on high for approximately 2 to 3 minutes. Add half and half, vanilla extract, and egg, then mix on for another minute.
Turn mixer to low and slowly add flour mixture. Mix until evenly blended, but be cautious not to over-mix.
Prepare a 9 inch cake pan by spraying it with non-stick spray. Pour the mixture into the pan, and place in a preheated oven. Bake for approximately 40-45 minutes, then remove from oven and allow to cool.
In a small mixing bowl, combine cranberry sauce and almond cake and pastry filling, then stir with a spoon until evenly combined.
Spread cranberry almond mixture over the top of a cooled cake. You will likely have some of the mixture left after covering the cake.
Slice the Cranberry Almond Cake, serve, and enjoy!
