As you gear up for an evening of fun, consider bringing a flavorful new dessert to the Cinco De Mayo party this year. This Almond Cream Churro Sandwich is unique, fun to make and absolutely delicious.
When you begin gathering your ingredients, make sure to pick up a can of Solo Almond Cake and Pastry Filling for the cookie sandwich filling. This is what will give your churro cookies a whole new taste!
Making the cookie dough is similar to creating other cookies, but the next step is the fun part where you can get a bit creative. You’ll either use a pastry bag or large zip-top bag with a corner cut out to form the swirly, spiral circle for your cookies.
After baking, don’t be alarmed if the cookies seem a bit greasy. This is completely normal, and as they cool they will look more like a typical baked cookie. The greasiness allows you to sprinkle your cinnamon and sugar on the cookies to make them as much like a churro as possible.
Once the cookies harden, it’s time to place the almond cream filling between them to create a sandwich. This cream will thicken up if placed in the refrigerator for too long. Spreading it on the cookies right after whipping it up is easiest.
BONUS: Any extra filling can be used as a fruit dip or graham cracker dip later.
Now sit back, have a safe 5th of May and enjoy your new favorite churro cookies.
