Eating Gluten-free doesn’t have to mean giving up great tasting foods. To prove it, we created this easy and delicious Gluten-free Chocolate Chip Almond Paste Cookies Recipe.
While it may seem odd to bake cookies without flour, the banana and peanut butter really make up for it. Then end product will be a little softer than a regular cookie, but the taste will be a pleasant surprise.
First, gather the ingredients. Start mixing together everything except the peanut butter and chocolate chips. Tip: You can use white chocolate chips in place of the chocolate chips for a lighter taste.
You can mix the ingredients with a large spoon, but an electric mixer will be best for the thicker ingredients, especially the Solo Almond Paste.
After scooping dough and baking the cookies, you will want to allow cookies to cool for at least 15 minutes.
Due to the consistency, these cookies can even be refrigerated before serving for a cool summer treat.
We hope that you enjoy this flavorful and easy-to-make dessert. Let us know what you thought of these gluten-free treats!
