The best way to create this dessert is to allow for overnight cooling. This means that you’ll need to give yourself enough time before that picnic to allow your ice cream to freeze properly.
Start with a mixing bowl that you will place in the freezer. This allows a good setup for your ingredients to become chilled, once mixed. While your bowl is in the freezer, mix your condensed milk, Solo Raspberry Cake and Pastry Filling, and vanilla extract in a separate bowl.
Once the mixing bowl has cooled in the freezer, you can begin whisking in the other ingredients.
You can now fold in the raspberry filling mixture to the colder, whipped ingredients. Make sure the color and consistency are the same throughout your mixture. Add in additional raspberry filling for added flavor.
Place parchment paper into a cake pan, then slowly pour in the ice cream ingredients. Add another layer of parchment paper before setting mixture in the freezer.
Once frozen, remove ice cream from the freezer, serve, and enjoy!
