Ingredients

4  
prepared 9x13 inch yellow cakes
1  
prepared 9x13 inch devil’s food cake
1 cup
unsalted butter, softened
2 tablespoon
dark cocoa powder
1 cup
confectioners sugar
1⁄2 teaspoon
black food coloring
3  
containers (16 oz) of prepared frosting
1 package
sprinkles or other decoration

Instructions

To make this Emoji "Surprise" Cake recipe...

  • Prepare 4 yellow 9x13 inch cakes. Allow to cool, then place in the freezer for at least 1 hour. For more vibrant color, prepare white cakes, and add 1 ½ tsp of yellow food coloring to cake batter before baking.
  • Prepare 1 devil’s food 9x13 inch cake. Allow to cool. For darker color, add 1 tsp of black food coloring to cake batter before baking.
  • In a large mixing bowl, add softened butter and mix with an electric mixer on high for approximately 1 minute. Add Solo Marshmallow Creme and mix on medium for approximately 1 minute. Gradually add confectioner’s sugar, cocoa powder, and food coloring, and mix on medium for approximately 3 minutes, or until a consistent color is achieved.
  • Crumble devil’s food cake into the mixing bowl and mix on medium for 2-3 minutes, until a consistent mixture is achieved.
  • Scoop the mixture into a pastry bag with a round tip (the bag may need to be filled multiple times).
  • Remove yellow cakes from the freezer. Using a round cookie cutter (a 5 inch cookie cutter was used in the example), cut two round portions of cake.
  • Using other cookie cutters or similar instruments, carefully cut out eyes and a mouth on each round cake. The round cakes will be fragile after the eyes and mouth have been removed. Handle with care.
  • Place a round cake on a piece of parchment paper.
  • Using the pastry bag, fill the holes for the eyes and mouth with the chocolate filling.
  • Place another round cake on top of the first and fill with the chocolate filling. Continue until all of the round cakes have been used. After several layers have been placed and filled, wrap parchment paper around the outside of the cake to prevent it from bulging due to weight.
  • When all of the layers have been stacked and filled, wrap the outside of the entire cake in parchment paper, then place it in the freezer for at least 4 hours (overnight is ideal).
  • Remove the cake from the freezer, and carefully unwrap the parchment paper. Apply a thin layer of frosting to the cake, then place it on a serving tray, on its side (be sure to position the cake so that the face is right side up). Return cake to the freezer for approximately 1 hour.
  • Remove the cake from the freezer and apply the rest of the frosting. Add sprinkles or other decorations if desired.
  • For best results, store the finished cake in the freezer until ready to serve.
