Ingredients

Cookie

1 3⁄4 cup
unbleached flour
1⁄4 cup
cocoa powder
1 teaspoon
baking soda
1⁄2 teaspoon
salt
1⁄2 cup
unsalted butter, softened
1⁄2 cup
dark brown sugar
1⁄3 cup
sugar
2 teaspoon
vanilla extract
1  
egg
5 ounce
dark chocolate (coarsely chopped)

Filling

1 cup
unsalted butter, softened
1 cup
confectioners sugar
2 teaspoon
vanilla extract
1⁄8 teaspoon
food coloring

Instructions

To make this Chocolate Marshmallow Cookie Sandwiches recipe...

  • Preheat oven to 350 degrees Fahrenheit.
  • Add flour, cocoa powder, baking soda, and salt to a medium mixing bowl. Whisk together until evenly blended, then set aside.
  • Add softened butter, brown sugar, and granulated sugar to a large mixing bowl. Mix with an electric mixer on high for approximately one minute.
  • Add vanilla and egg to the mixture and mix on high for an additional 1-2 minutes, until a smooth consistency is achieved.
  • Slowly add the flour mixture to the large mixing bowl, while mixing on low. Continue to mix until evenly blended. Do not over mix.
  • Add dark chocolate and mix with a spatula or wooden spoon until evenly distributed.
  • Prepare a cookie sheet by lining it with parchment paper.
  • Roll dough into approximately 1 inch balls and place on the prepared cookie sheet.
  • Place in the preheated oven and bake for approximately 7-9 minutes.
  • Remove from oven and allow to cool on cookie sheet for several minute before moving the cookies to a wire cooling rack to cool completely.
  • In a new mixing bowl, add softened butter, Solo Marshmallow Creme, and vanilla. Mix with an electric mixer on high for approximately 2-3 minutes while slowly adding the confectioners sugar.
  • Add food coloring and mix on high for approximately one minute, or until color is consistent.
  • Put filling in a pastry bag.
  • Pipe filling onto half of the cookies, then top with an additional cookie.
