Ingredients

Cake

1⁄2 cup
butter
3⁄4 cup
sugar
1⁄2 package
Solo Almond Paste
1⁄2 teaspoon
vanilla
1 teaspoon
almond extract
2  
egg
2 1⁄2 ounce
plain greek yogurt
1 1⁄2 cup
flour
1⁄2 teaspoon
baking soda
1⁄2 teaspoon
baking powder
1⁄2 teaspoon
salt

Glaze

1 cup
confectioners' sugar
1 tablespoon
milk
1⁄2 teaspoon
almond extract
1⁄3 cup
almonds (chopped)

Instructions

To make this Almond Pressure Cooker Cake recipe...

  • Use an electric mixer to combine butter, sugar, and almond paste with the vanilla and almond extract until light and fluffy.
  • Then add the eggs individually, mixing each time.
  • Then add the greek yogurt and mix again.
  • Then in a separate bowl, mix the flour, baking soda, baking powder, and salt before combining it in the mixing bowl.
  • Pour the batter into a buttered 7-inch bundt pan or a springform pan. Cover the pan with foil and place on a trivet.
  • Add 2 cups of water to the bottom of the pressure cooker. Then, use the trivet to lower the pan into the pressure cooker.
  • Put the lid on the pressure cooker and turn the vent to sealing. Cook on manual for 90 minutes at high pressure. Use a natural pressure release and carefully remove the cake.
  • Keep the cake in the pan while you make the glaze. The cake should cool slightly before removing, about 10 minutes.
  • To make the glaze, use a small bowl and combine all of the ingredients. Then, pour over the cooled cake and top with almonds, sprinkles or decorative sugars for garnish.
