Easy Cheesecake Recipe - Adapted from our Cheesecake Bars
For this cherry cheesecake recipe, you can use any type of crust including store-bought, graham cracker, or one of our six other healthy pie crusts.
- 2 packages (8 oz each) cream cheese, softened
- 2 teaspoons vanilla extract
- 1 cup granulated sugar
- 1⁄2 teaspoon grated lemon peel
- 4 eggs
- 1 can Solo Cherry Cake and Pastry Filling or another cake and pastry filling flavor. (optional)
Cheesecake Cooking Instructions
Preheat oven to 350° F.
Prepare crust according to the recipe, or the package instructions, and bake it before adding the cream cheese mixture. Let the crust cool on a wire rack for 10 minutes.
To make the filling, beat cream cheese, granulated sugar, eggs, vanilla and lemon peel in medium bowl with mixer until blended and smooth.
Pour over crust and spread evenly. Bake 40 to 45 minutes or until center is set.
Cool completely in pan on wire rack. Spread filling over cooled cheesecake. Refrigerate 2 to 3 hours or until well chilled. Enjoy!
