Low-fat Brownies
24 cake-type brownies
3/4 cup Solo or Baker Prune Plum (Lekvar) filling
11/2 cup sugar
11/4 cups water
1 cup unsweetened cocoa powder
4 egg whites
2 teaspoons baking powder
2 teaspoons vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
11/2 cups all-purpose flour
1/2 cup chopped nuts (optional)
Preheat oven to 350° F. Spray a 9 x 13-inch pan with non-fat baking spray and set aside.
Combine Lekvar, water, egg whites and vanilla in medium-size bowl and mix well. In separate bowl, stir together flour, sugar, cocoa, baking powder, baking soda and salt. Add lekvar mixture and stir together until just mixed. Spread batter evenly in prepared pan. Sprinkle nuts over top.
Bake 20 to 25 minutes or until springy to the touch. Cool and cut into 2 x 2-inch squares.
