Hi-Fiber Date Muffins

12 muffins

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup wheat germ or unprocessed bran
1/2 cup all-bran cereal
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup vegetable oil
1/2 cup firmly packed brown sugar
1 egg
1/4 cup milk
1 can Solo or 1 jar Baker Date Filling

    Preheat oven to 375° F. Grease 12-cup muffin pan and set aside.

    Stir flours, wheat germ, all-bran cereal, baking powder, and salt in medium- size bowl until blended and set aside. Beat oil, brown sugar, egg, and date filling in medium-size bowl with electric mixer until well blended. Make well in center of dry ingredients and add date mixture. Stir with wooden spoon until thoroughly combined. Spoon into prepared muffin cups, filling cups about two-thirds full.

    Bake 18 to 22 minutes or until toothpick inserted in muffin comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan and serve warm or cool completely on rack.
