Chocolate Chip Date Mini-Loaves
3 mini-loaves
1/2 cup sugar
1/4 cup water
1 egg
2 cups all-purpose flour
1 tablespoon vegetable oil
2 teaspoons baking powder
2 teaspoons vanilla
1 cup semi-sweetened chocolate mini-chips
1 can Solo or 1 jar Baker Date filling
1/2 cup chopped nuts
Preheat oven to 350° F. Spray 3 miniature loaf pans (31/4 x 53/4 x 21/4-inch) with non-stick spray and set aside.
In large mixer bowl, beat sugar and egg on high speed for 2 minutes. Blend in oil, vanilla, Date filling and water. Stir together flour and baking powder. Add to date mixture, blending well. Stir in mini-chips and nuts. Divide batter equally between pans.
Bake for 40 to 45 minutes or until cake tester comes out clean. Cool 10 minutes; remove from pans and cool completely on wire racks. Hint: These delicious little loaves are wonderful hostess gifts. Bake several batches before the holiday season and freeze until needed. Recipe also makes one 9 x 5-inch loaf. Baking time will be slightly longer.
