Apple Sour Cream Coffee Cake
15 to 20 servings
1 cup butter or margarine
1 teaspoon baking soda
1 cup granulated sugar
1/2 teaspoon salt
1 can Solo or 1 jar Baker Apple filling
3 eggs
1 cup dairy sour cream
11/4 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup brown sugar
21/2 cups sifted all-purpose flour
1/3 cup finely chopped nuts
2 teaspoons baking powder
1/3 cup raisins
Preheat oven to 375° F. Grease and flour 9 x 13-inch pan and set aside.
Cream butter and sugar thoroughly. Add eggs one at a time, beating well after each addition. Mix in sour cream and vanilla until blended. Fold in flour, baking powder, soda, and salt. Spread half of batter into prepared pan. Spread with apple filling; sprinkle with raisins. Cover with remaining batter. (Batter will be quite thick.) Combine cinnamon, brown sugar and nuts. Sprinkle over batter.
Bake for 30 minutes or until done.
