Tips to prevent your cake from collapsing

Ever wonder what causes your cake to collapse? It looks great until you take it out of the oven and then it collapses in the middle as soon as you set it down to cool! Don't fret, you're not alone. A cake that puffs up as it bakes and deflates as it cools has usually had air beaten into the batter too quickly or vigorously. Here are a few tips to prevent your cake from collapsing:

  • Try to strictly adhere to the cook times in the recipe. Beating a mixture for just a minute longer than you’re supposed to can make a big difference and cause your cake to sink.
  • Add the eggs one at a time, making sure beat them briefly between each addition.
  • Beat your eggs and butter on a moderate speed, not high to insure the air bubbles your form are more stable.
